It took many chicken salad recipes to get here, but I am happy to have finally arrived at a recipe I am truly satisfied with. This chicken salad is simple and classic. If you are looking to make healthy substitutes, this recipe may not be for you. I have tried Greek yogurt, avocado, fat free mayonnaise and more. It never tasted quite right. Full fat is your friend here! While I prefer to skip it, feel free to add some almonds or pecans for a crunch. Dried cranberries, grapes or apples are also a solid compliment. But again, I opt to leaver fruit out. Savory, full fat chicken salad is the way I roll.
Ingredients:
Chicken pulled from 1 rotisserie chicken (note: you can also boil and shred chicken breast)
1 small red onion, diced extra small (I actually put mine in the food processor)
4 stalks of celery, diced into small pieces
1 cup Hellman’s full fat mayonnaise
1 cup full fat sour cream
1 teaspoon dried dill weed
1 teaspoon Accent seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon dried parsley
dash of salt (optional, the Accent is salty)
Instructions:
Mix all of the ingredients in a small mixing bowl and let chill in the fridge before eating. It’s that simple! Enjoy!
